The rind is dry, smooth and very thin. A great number of large holes or “eyes” are spread evenly throughout the homogeneous, shiny, yellow paste.
This type of Emmental is produced in the area covering the Franche-Comté and Rhône-Alpes regions.
It is protected in two ways: with a protected geographical indication (PGI) and a Label Rouge.
The Label rouge guarantees a fruitier taste, as this cheese is made with raw milk taken from cows exclusively fed on grass and hay; its taste is also enhanced by a long three-month maturation period, according to the traditional recipe.
