Emmental de Savoie (PGI)
“Cheeses used daily and for cooking”Emmental de Savoie was granted a Protected Geographical Indication (PGI) in 1996. This official European label guarantees the quality and Savoie origin of this cheese. From milk gathering to maturation, all the steps of the manufacture of Emmental de Savoie take place on Savoie territory. That is what makes this cheese an inimitable specialty of the area! The word « Savoie » is stamped on the edge of the cheese. The cheese is matured for at least seventy-five days and up to twelve months.
It takes between 237 and 264 gallons to make just one wheel!
The thin rind is yellow to brown, smooth and dry; the paste is light yellow with a number of walnut-sized holes.
