Cœur d’Arras

This small heart-shaped cheese, like many local specialties if its area, was specially designed for the « rat festival » that is held in Arras every year at the Pentecost. The celebration commemorates the 1640 French conquest of Arras, which had previously been under Spanish rule. The taste of the cheese is like a sweeter version of Maroilles.

This washed-rind cheese has an orange tinge.

It gives off a strong odor. Its taste is close to that of Maroilles. Powerful at first bite, it reveals its subtleness after a moment and leaves a sweet aftertaste in the mouth.
