Carré de l’Est is a slab-shaped, soft-ripened cheese with a bloomy rind. It is originally from the Lorraine region. Today, it is principally manufactured in dairies using pasteurized or thermized milk.
The definition of this cheese was established by the decree of April 27, 2007.
It is available in three formats:
Petit Carré de l’Est, 2.5 to 2.9 in. on each side and 4.4 to 5.6 oz.
Carré de l’Est, 3.3 to 4.3 in. on each side and 3.5 to 10.5 oz.
Grand Carré de l’Est, 7 to 8.2 in. on each side and 28.2 oz. to 2.6 lbs.
The thick, very downy white rind of this cheese conceals a soft, creamy, shiny off-white to pale yellow paste with small holes.
