Abbaye de Belloc“Goat and Ewe” cheeses
This cheese made from raw, whole ewe’s milk from the Basque country has been manufactured by the monks of the Notre Dame de Belloc monastery since the 1960s.
A flattened wheel with a convex heel. Its bloomy rind is naturally gray and spotted.
