Just as it takes time for bread to rise, it takes time for cheese to mature. That is just one of the things bread and cheese have in common. The two go together instinctively, the bread bringing a base and a flavour, and the cheese spreading out or sitting on top. Bread opens up multiple possibilities for cheese: it varies in the extent to which it is acidic, risen or wholemeal, and can come plain or with added ingredients.
