Tome des Bauges
"Authentic" cheesesTome des Bauges is an uncooked pressed cheese made exclusively from raw cow’s milk. It can be distinguished by its thick, rugged gray rind.
This cheese was originally the family-produced cheese of all the inhabitants of Massif des Bauges, between Savoie and Haute Savoie. Its production as a « merchandise » developed during the 20th century.
This Tome – note the single « m » – obtained a registered designation of origin (AOC) in 2002 and a protected designation of origin (AOP) in 2007.
A green casein mark is visible on its rind when the cheese has been farm-produced, and a red mark can be seen on the dairy variety.
Tome des Bauges features a relatively thick, rugged gray rind on which yellow, red, pink or white molds can form. Its paste is homogenous and yellow with small holes.

Its rind has a marked aroma of mushrooms and must, while the paste reveals fruity, woody notes that cheese lovers will adore. The paste has a soft texture, a balanced flavor and a straightforward, but not strong, taste.
