This famous cow’s milk cheese is a soft-ripened, washed-rind cheese that is industrially produced in the Dordogne département by the Chaumes company. It is matured for approximately one month. Its soft paste is covered by a yellowish orange rind of a hay color, which is what it is named after (« chaumes » translates as « thatches »).
The cheese is best known in its large format sold as cut cheese, but it is also available in a seven-ounce small format called « Petit Chaumes ».
