Sainte-Maure-de-Touraine
“Goat and Ewe” cheesesThis famous goat’s cheese log has enjoyed a registered designation of origin (AOC) since 1990 and a protected designation of origin (AOP) since 1996. Its name is taken from its native town. This soft-ripened, natural rind cheese is crossed by a straw of rye upon which is printed the name of the designation attesting to its origin. This straw maintains the shape of this fragile cheese and keeps it from breaking.
The ashy surface of Sainte Maure de Touraine gradually wrinkles and becomes covered with gray and blue down. The paste reveals a thin creamy layer next to the rind, and remains firm, dense, homogenous and bright white in the center.

The surface of this cheese features earthy, musty or fresh hay aromas, while its center offers a tangy, lactic freshness. It has a light goaty, hazelnut taste, and its rind develops more pronounced, varied flavors with maturity.
