This large goat’s cheese log features a bloomy rind and is usually produced by dairies. It can be made anywhere in France, but its production is concentrated in Poitou-Charentes. Logs of goat’s cheese are available in two formats: that of 2.2 lbs. at the cheese counter and another, 14.1 oz., in the cheese aisle.
A goat’s cheese log is very often cut into thin slices to be used as a pizza topping.
The paste is covered with a thick, bright white rind which can be smooth or streaked. The paste itself is also bright white, smooth and dense, with a creamy ivory layer next to the rind.

With a crunchy rind and a paste that melts in the mouth, this cheese has a straightforwardly goaty taste but maintains a nice tangy freshness in the center. The taste can be slightly sharp on the surface.
